8 prepared cannoli shells
2 cups whole-milk ricotta, drained overnight
3/4 cup powdered sugar
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/3 cup mini chocolate chips
1/4 cup chopped pistachios
1 tsp orange zest
Method
Drain ricotta in a fine sieve lined with cheesecloth overnight under refrigeration.
Whisk ricotta until smooth, then fold in powdered sugar, vanilla, cinnamon, and orange zest.
Fold in chocolate chips and chill the filling for at least 30 minutes.
Pipe filling into cannoli shells just before serving to keep them crisp.
Dip ends in chopped pistachios and dust lightly with powdered sugar.
